We have actually experienced a spring this year and it has been really nice. Although, I here this next week is going to be quite summer like….guess we will have to water the gardens more this week. 🙂

Today was another beautiful day at the market with plenty of produce, plants, eggs and other meats, breads, soaps, berries, and much more. This week’s market feature is a sweet treat … Woodleaf Honey. This honey is pure Franklin County honey made on the Woodleaf Plantation using organic beekeeping methods.

I use this honey to sweeten drinks, on toast, and I can turn a simple rice cake into an awesome dessert with this honey and a little cinnamon. My mother has always used the beeswax hand cream not only for dry skin but also to heal any wounds she may have. If you like honey but have not tried Woodleaf’s, stop by their booth and try the free samples they have. I feel confident you will enjoy their honey. They also have candles, hand cream, beeswax bars, and beeswax lotion bars.

The Markets Opened Today…

Lettuce

Many of the farmers markets in my area (Wake Forest, Durham, and Carboro) opened today. It’s like a family reunion going back to the market after what seemed like a really long winter.  Seeing all of the old vendors was great and I also met a few new vendors for this year. This is an exciting time of year where the season, our pallets, and available local foods change. There was honey, lettuce, spinach, eggs, organic meats, and jams available. Plenty of bedding plants were also in great quantities if you are like me and want to grow some of your own vegi’s.

This is some of the lettuce mix I purchased. I cannot wait for my taste buds to experience the mixture of flavors! Until next week be healthy, wealthy, and wise!

Kiwi Salad

You will need:

  • 6 kiwifruit, peeled and sliced
  • 1 cup sliced strawberries
  • 1 cup fresh pineapple cut into 1 inch pieces
  • 1 TBS lemon juice
  • 1 tsp honey

Mix all ingredients together and serve immediately.
